Kale Chips

I recently picked up some beautiful organic curly leaf kale, perfect for making kale chips. This  is a modified version of the VegieHead recipe by my friend Adele.

Ingredients
2 bunches of kale
300g/2 cups raw cashews
1 tsp turmeric
1 tsp ground cumin
1 tsp paprika
1/2 tsp cayenne pepper (1/4 if you only want a hint of spice)
1 Tbs agave or honey
1 Tbs lemon juice
200ml water

Method
Pull the leaves off the stems of the kale, and wash in the sink with a splash of apple cider vinegar. Shake or salad spin the leaves to remove excess water and place in a large bowl
Blend the cashews speed 7 for 7 secs
Add the rest and mix on speed 3 for 10 secs
scrape down sides and mix speed 3 another 20 secs
If its too think to pour easily, add a bit more water
Pour mixture over the kale, and massage thoroughly into all the nooks and crannies of the leaves
Spread wet leaves on 4 food dehydrator trays
Dehydrate over night, or over the daytime, or till crispy
If you don't have a food dehydrator, then use the oven on the lowest setting
Store in a sealed container

Hello Kristine. I am looking at getting a food dehdrator, but I am having trouble working out the best value for money. We will be using it for meat as well as Vegetables...and of course these lovely looking Kale chips. Do you know much about the pros and cons of different Food Dehydrators? Thankyou.

Hi Jane, the only one to get is an Excalibur food dehydrater. You can get a 5 tray one but the 9 is better. The value for money is better with the 9 tray and I know people who have had both that say the 9 tray performance is better. Less expensive ones tend not to have even temps throughour the whole unit and round ones, especially with the hole in the centre are not user friendly for spreading out ingredients to dry. Make sure to buy texslex sheets with it which are thin sheets to spread out wet ingredients on that would otherwise fall thorugh the holes of the mesh on the trays. I have a 9 tray, but only have 3 texflex sheets which seems to be enough. I hope this helps!
