![]() Granola is pretty delicious is it? Pop it on/in your smoothie, or a snack with some yoghurt? There are many varied recipes out there but most involve a selection of nuts, seeds and oats coated in oil and a sweet syrup and toasted in the oven, with dried fruit added afterwards. When it cools it is crunchy and delicious! This is my most recent gut friendly version which omits anything sugary added (previously I would use a little maple syrup or rice malt syrup) and within an allowed selection of nuts and seeds according to kale Brock's Gut Healing Protocol. This one is 1 cup each of Brazil nuts, almonds and walnuts chopped roughly by hand and added to 3 cups of coconut flakes. Toss in a 1/4 cup of melted coconut oil, spread on an oven tray and toast for 40 mins on 120 degrees C. I give it a stir after 20 mins. Let it cool fully then pop in a glass jar! My previous one I used pepitas (pumpkin seeds) but found their toastiness (is that a word??) a bit too savoury. Has made me ponder a savoury version for salad toppings though. ![]() This version includes almonds, macadamias and walnuts with vanilla powder and ground cinnamon. Yum!
